Logger- Honoring the timber industry thats deeply rooted in our neck of the woods! We aged this earthy cider on toasted American oak and finished it with pine. Summit Cider- is Coeur d Alene's premier (and only) cider house. Our tap room serves our own delicious hard apple cider, as well as beer and wine.

Uncrushable Apricot- a crisp, dry cider with just a touch of apricot - perfect for a hot summer day.

Yard Sale- Our only unfiltered cider that is produced year round. Yard Sale stands alone in its mouth feel and smoothness. Lightly carbonated with a touch of raw juice and tannin to finish.

Fall Line- Summit’s primary fully filtered and dry cider. Produced with a blend of Washington apples its crisp and tart finish blends with with a pop of carbonation. If champagne was made with apples this would be it.

Corduroy-  Our flagship cider is made with the perfect blend of Washington apples and just a touch of sugar. The white wine yeast enhances fruit flavors and fruity esters. Your every day cider!

Greenhorn- Summit’s only medium cider, this fully filtered cider is ripe with fresh apple taste and a smooth finish. Greenhorn as it’s name implies is our entry level cider that is sweetened with fresh press juice.
Sundance- is our most unique and flavorful cider. We start with a medium dry cider then add hibiscus flowers, rose hips and a touch of lavender. A wine drinker’s cider that is perfect on a hot summer day. This cider has light coral color and is very bubbly. It is currently available in kegs. Clear bottles will be available in 2017.

Dry Creek Dry Cider- runs like a vein of life through our farm. Spontaneously chaotic to tranquil and meandering; the chorus flanking its sides rejoices at dawn and howls at stardust. The raw nature of Dry Creek is captured in this bottle. A cider for those who forage for a crisp and wild taste; thirst-quenching, complex in spirit and totally captivating, just like our beloved high desert. 
Farmhouse Style Cider- is bottle conditioned and has naturally occurring yeast deposits. Gently pour as to not to disturb the lees. Best stored and served chilled.

We thought it was time to make a craft hard cider with our own Peaceful Belly spin. Introducing Stack Rock Cidery! Clay has been passionate about using Idaho apples and adding his own special flare.  

THE CIDERS:


Strong Arm- semi-sweet, everything you expect from a cider, tastes like and apple right off the tree. Full juicy flavor that begins and finishes with the same ferocity. 

Semi-Dry- cider reminiscent of champagne with a crisp bitter flavor and slightly sweet overtones. 

Ginger Root- if you need an excuse to drink here it is, ginger is good for you. So cure what ails ya with a powerfully tasty ginger beverage, not too sweet, deliciously crisp, and ever so sessionable. 


Hop Shot (Hopped)- enough hoppy characteristics to make this comparable to a pale ale, while still gluten free, and just enough balancing sweet. 


Trailhead Cherry- dark and complex cherry flavor made with bing cherry juice, followed up by a host of flavors like pepper, fruit leather and honey.
